Brewery Bar II is pretty good- I've had their Guac and it's quite good... Can't remember the day, but the day before they make a new batch of green chili it is HOT!

Not a fan of their food in general and I almost kicked my wife when she ordered a $8 guaamole, but the service sucked and we got it free anyway.

Homemade is best, if you can cook, which I cannot.
I remember getting some excellent guac at Whole Foods by Cherry Creek Mall. Talk to the folks making it and get it when its fresh.

You beat me to it man. I can't stand this place.... save for their guac. The come out to your table with all the ingredients in bowls and make it at your table. The best part is, unlike most places, they realize that guac by itself is perfect and doesn't need 499 mystery/special ingredients. They cut the avocados and mash them up and then they dice and add onions, tomatoes, cilantro and then garlic salt. Perfect! I suggest you go there just for this appetizer if that's what you're looking for. IMO you won't find better and when I make guac at home I do the same thing but I throw in diced jalapenos too and everyone loves my guac.

Lay it out there

5-6 avacados
1 lime
1/4-1/8th cup fine minced red onion
1 jalopeno fine mince
2tsp red pepper
2tsp garlic powder
1tsp onion powder
tbls adobo
2 tsp cumin
salt to taste

mash it all up with a hand masher in a big bowl then transfer to tupperware container before closing take a piece of saran wrap and lay it in top of the guac making sure its in constant contact with the guac (this prevents browning) next day you are good to go!

this is a good base recipe feel free to add stuff or take stuff out i like choped tomatoes in there once in awhile

Since we are in the same neighborhood. Have you tried that Mexican restaurant on Harlan just a little north of 44th? You damn near have to know spanish to read the menu, but the food is awesome authentic Mexican.

Yep, been doing this for years & it works awesome. Also, adding lime juice will cause the guacamole to brown faster.

the saran wrap thing works 100% the pit in there seems to keep it green around the pit but brown around the edges.....

Man, I can't believe ANYBODY hates On The Border! I could live on their food forever, and their margaritas are awesome. But guacamole is a gift from the gods.

Don't get me wrong, I like OTB quite a bit, but let's be honest, they are about as commercialized as it gets, only being slightly more authentic than taco bell and similar chains.

With that said, I'm not a huge fan of guac, but love me some Mexican food. I see Casa Vallarta and La Fogata have both been mentioned, two of my favorites. Garcia's on Belleview is tasty as well, Los Arcos in Westminster is good (there is also one in Lone tree). So many great choices around.

The guacamole at Whole Foods is pretty good if you don't want to bother making it yourself . . . made fresh in store, several varieties . . . I usually get the one made with Hatch chiles. Most of the restaurants I've been to are rather stingy with their portions . . . pay five bucks and get an ice cream scoop full.

Have a great recipe from one of my old Hwy brothers. He was married to a gal grew up on the border.
Can't give it out though cause it is a secret and the brotherhood would hunt me down.

+1....use saran wrap, make sure you press it down all the way to the guac. Prevents air from getting in.....also never had a problem with lime juice turning it brown?

Like I said, the ONLY thing worth eating there IMO is the guac. Everything else can take a leap.

I got some really good guac at Soopers a couple weeks ago, I think the brand was "Yucatan". Of course, I'm not sure I know what good guac really is!

Also just had the Guac Live at On The Boarder. It was good. The only problem was there were way too many other people eating it. I went to use the restroom and when I came back it was half gone!

Little joint in Wiggins, "Fajitas" makes some great guac, and their sauces, green chile and salsa are awesome. The wife seems to have broken the code to their guac recipe, can barely tell them apart.

Doubtful, she has had to stop making it as much now, she is in her 60s and has just developed an avocado allergy so bad she breaks out if she even touches it :(
