View Full Version : WARNING TO THOSE THAT SMOKE MEAT

For those of you that like to smoke meat here is a little lesson I learned over weekend. What happened: while smoking some ribs this weekend I noticed that my smoke was cooling down. I opened the bottom up to notice that the burner was out. So I hit the igniter thingy and BOOM.[Flame][panic]

I guess the smoker had filled with propane and I set the whole thing off. The doors flew open shooting flames up my right side, legs, arm and beard and half my hair on my head were sizzled. My right ear got 1st degree burns. Had to run the trimmer through my beard to even it out and get as much of the crispy hair as I could, and the same with my head. Hair on my arm and legs are gone. I put burn cream on my ear and have had to sleep on the left side of my head for the last few nights. So if any of you have your smoker go out make sure you vent all the gas out before re-lighting it.

Delete the thread this didn't happen... With smokers it can really just be a couple of seconds without a flame and boom..

Oh it did. It was probably sitting there for a little while because the temp was down from 200 degrees to about 50. if you want you can come over and give it a try. And the meat was fine.

I use a wood pellet smoker. I guess I'll be safe.

Hahahha I am glad you are ok... a friend of mine torched off an exhaust system from the cat back, then decided to blow some debri out of the cat using the very same oxygen from the torch. We were watching the whole time - even warned him about lighting it up w/ all that O2 in the pipe, but nope, he lit up the torch, brought it up to the cat and BOOM. One swollen eye and an eye brow later, he tends to listen to us more carefully with his good ear now.

[ROFL1] I don't care who you are, that right there is funny... You do point out, that is a slightly homoerotic thread title. But DG, seriously, glad you're okay, had almost the same thing happen last summer when re-lighting the grill, somehow it went out, leaked propane into the lid and caused a pretty awesome fireball.

Smoking meat is good, but so as not to blow yourself up, use charcoal and Hickory, or you could be Richard Simmons mini me.

The first thing I did after patting down all affected areas was to look around and make sure no one saw me do this.

I'm going to have to re-think this whole propane thing. I need my eyebrows.

This is one reason I built a wooden cabinet around my propane smoker, is to keep the wind away from the flame so it doesn't get blown out. Still have to put a door on it and paint the thing. Works great though. Gets it up where I can reach it without bending over, has storage for two propane tanks and wood chunks below. Wheels around on the patio wherever I want it, and sits in the corner by the house out of the way when not in use.

Wow that's a lot of meat you got there. This is a good idea and my smoker is about the same size. It would also help in the winter when its really cold out. I find it hard to get it up to the right temperature. I've been putting up plywood to keep the wind off it.

No, I've done it... Buddy had one with glass in areas that he made. Fortunatly the glass was on the sides

So far I've only owned/used a charcoal & wood chuck smoker with a drop-box for the wood/coals. The problem with these is they require lots more tending than the propane types.

See there is my concern over getting a smoker, there are just 3 of us. I wouldn't know what to do with all that meat and I'm sure as hell not going to give it away.

I forgot to mention that all that meat in my smoker was for a fundraising poker run we did for a friend of ours who has a blood disease. I think there's 80 lbs. of pork shoulders in there. That ain't no family feed, there was several hundred folks chewin' on that stuff. Helluva maiden voyage for a new smoker, and a helluva leap of faith for a BBQ noob (me). Sure glad it turned out well, it was actually awesome.

But the cabinet works very well, keeps the wind off and the temp stays quite stable. I turn the burner down as low as it'll go, fill the wood pan with large chunks of hickory, and keep the water pan full. Smoke cigars and have a beer or two.

Cabinet is approx 24"x24"x7ft. tall. Just kinda made it up as I went, no plans or anything. It does have a back on it too, open at the top to let the smoke out. Very Bubba and unscientific.

But as far as the OP's original warning - gas grills will damn sure blow up too! Gotta be careful about re-lighting them.

Another reason I use a Cookshack electric smoker. Constant temp, no water pan, never more than 3 oz of wood per run, perfect every time. Oh, and no blowing up in your face.

Glad to hear you're OK. Reminds me of some fryer accidents I've encountered - set the garage floor on fire once.
