I was shifting through my boxes of bottles in the basement seeing what wines and beers I had been hoarding and came across a couple of bottles labeled "apple wine, 9.6%, bottled 5/30/09." So I chilled and then opened one and after being happy that the pop top still had an audible pop and hiss when opening gave a quick sniff to find it smelled like apples. After pouring and remembering this was from a batch I made from a group buy of juice with guys at The Brew Hut in fall of 2008 I noticed it was never clarified or filtered. Any residual sugar had been consumed and it is dry, but with great apple flavor and aromas, slightly acidic. Have a bottle of cyser I made from the same juice and some local wildflower honey that I'm going to open soon as well.

The first two sip didn't do anything...then it started to grow on me. Lot of fruity malt. This stuff comes straight from the kettle to the bottle. No sitting in the barrel. No wood, not a bourbon. This is a whiskey by definition.

The JD/JB/EC fans will get put on their arses. Down proof vs 92 proof...
