Nice bite and it's got a Scottish plaid. More sharp then a New York extra sharp.

What else is good?

Edit: Better?

Have you tried waxing your own cheese at home to store at room temperature yet?

King Soopers had some and they were absolutely vile.

My Dad's aunt used to own a small cheese plant in Northern Wisconsin. Nothing like curds right outta the vat.

OP, Murray's Welch Cheddar at King Soopers is pretty good. I spend a fortune on the Butterkäse there.

Depending on which King Soopers you go to they can have a decent cheese selection. The one by my house has a cooler just for good cheeses that's separate from all the Kroger brand stuff in the back dairy case. Usually have some good domestic and European varieties to choose from.

Parker KS has a Murrays Cheese kiosk setup separate from the main deli and it's usually staffed by at least one person.

One of the things I miss from being stationed in England - the cheese carts in the town square.
a good Blue or Dubliner for me. My wife is into goat cheese - I don't like the way goats smell, so I can't do it.

I've yet to make cheese curds, but from what I've read/seen, it looks pretty simple.

Well, I was, uh, sitting in the public library on Thurmon Street just now, skimming through Rogue Herrys by Hugh Walpole, and I suddenly came over all peckish...And I thought to myself, "a little fermented curd will do the trick," so, I curtailed my Walpoling activites, sallied forth, and infiltrated your place of purveyance to negotiate the vending of some cheesy comestibles!

It's amazing how your tastes change as you get older. I was in Wisconsin for a swim meet when I was in high school and yelled at at Subway because I didn't want cheese on my sandwich. Now I will sit down with a good Blue, Gouda, Chedder, etc. I love the stuff.

One of my former LT's would go back to Wisconsin to hunt every year and would bring back cheese curds. We started deep frying them, then wrapped them in bacon and deep fried them. Good stuff.

One of the best side dishes I ever have had is Blue Cheese Au Grautin potatoes.

If you don't know "the squeak" you don't know curds. :)

Got that right. Warm, wet, and squeeky. Just how I like my women.

P.S. You can pop aged curds in the MW for a few seconds to bring back some squeek. If they don't, they were too damn dry to begin with and already crap. Curds also freeze well if needed.

There is a reason Wisconsin's unofficial motto is "Eat cheese or die". Trust me "happy cows" do not make the best cheese, the ones that are frozen half the year do.

or in you cheese eating keyboard commandos case, constipated shuffle. [LOL]

ETA - I love cheese and hang around the cheese kiosk when ever we are at metro area King Soopers. And cheese causing constipation is a myth.

The gal at the retail counter in the last Wisconsin Cheese Plant I was in said, "California may have happy cows, but they don't know shit about making cheese." [LOL]

Great, now you got me hankering for some Lake Perch.

Any of you guys with smokers try it on cheeses yet? If not you're missing out.

I mentioned this to my boss from CA. He asked how you could smoke cheese? I told him you have to roll it really tight. His look was PRICELESS.

Ah, the days of piling into the old man's wagon and driving out to lake Michigan to pull a 40' Seine through freezing waters. I can still smell the beer farts.

We used to fill a couple 30 gal (fresh) trash cans in a couple hours.

I have family in GB where I grew up.

Watch out for that fake Perch!

When we're there, we try to go direct to the commercial fisher in Suamaco that supplies most of the restaurants/bars in the area with fresh caught Bay Perch.

Carr Valley Cheese in Sauk City, WI is always on the agenda when visiting the relatives in Wisconsin. Also a great bald eagle winter nesting ground.

Same here. Our family is in Appleton and the UP. We have to make sure we have enough room for the curds, Spotted Cow, and homemade sausage. And a +1 on the no place for a good fish fry. This Lent season has been very dissappointing.

They ship, got some 2 weeks ago. Not as good as grabing a still warm bag off the counter but they weren't bad.
