...then you'll need to pay attention to the ingredients list. Many products are being advertised and marketed as not having Nitrates or Nitrites "added". What these producers are doing is introducing celery based products that have naturally occurring Nitrites. I've recently found a couple of our meat products that were labeled as not having added Nitrates or Nitrites, but the celery product added in had no other place in the product other than to add the Nitrates or Nitrites. The label even had an asterisk to identify the celery ingredient as being there "To Preserve Quality".

I try to avoid nitrites and nitrates except for when I eat bacon ham sausage or hotdogs. Might as well die from pure deliciousness instead of some other things.

Your body produces more nitrites that you could ever possibly get from eating foods using them for preservatives. The whole nitrite/nitrates are bad is a myth.

I'm going to disagree with you on this TAR31.

Many years ago I bought some shredded jerky that was in a Skoal type of container. Stuff gave me a hellacious headache. Found out it's loaded with nitrates (or nitrites). Since then I've found that many products containing either nitrates or nitrates do the same thing, even when eaten in moderation. Many folks, like me, can't tolerate the stuff. Word is it increases blood pressure too which may be the cause of the headaches. I have HBP controlled with meds, but when it jumps I get nasty headaches.

Following along in this vein, how many of you actually read the labels?
How many of you buy products that were in part using ingredients or all of it from China?

There is was a discussion IIRC in the S&P forum regarding food additives etc.

I'm too lazy to do a search at this time.

I enjoy my products that normally have Nitrites and Nitrates. I just find it disingenuous to say that they are not added when they certainly are.

If I am not mistaking nitrates (both kinds) are present in cured foods, and necessary as a preservative so you don't get botulism, which will kill you. Nitrates are not necessary for raw sausage that is fully cooked. Bacon, Jerky, dried cured sausage probably all have nitrates.

I don't have a citation but goole it and look up sausage making.

Nitrates are in ALL plants to varying degrees. Simply take your vitamin C, and it prevents nitrates from converting to nitrites, which are what converts to nitrosamines, which are the actual problem.
