I heard this subject on the radio this morning and thought it was a great topic. I could name more than three but here's my start:
Titanic
Twilight
Star Wars Episode 3
1. Star Wars (all of the originals)
2. Indiana Jones (all of the originals)
3. Star Trek (all of the originals)
3. Dances with Wolves
3. A Few Good Men
3. Basic Instinct
Of note: It took me over ten years to watch Braveheart after getting a recommendation and promising that I would watch it "soon." The first mob movie I ever saw was Goodfellas and it was in my junior year of college (2004?)

I've seen the first Star Wars, but it was 25 years ago.
My cousin once asked me to describe every scene of every Indiana Jones movie I had ever seen. I went on and on describing scenes, even including the live action show they had at Universal Studios. Turns out it was all from the first one.
I've seen the Star Trek where Spock dies, and the next one. Pretty sure one of those stars Kahn.

I think twilight hopefully goes without mentioning. I dont fault anyone for no LOTR/harry potter. (I hate potter, and preferred the books for LOTR)
"New" Star wars made many fans no longer fans.
But the originals in non altered cgi "enhanced" version are still a classic, if primarily for the quality of the special effects of the time using micro models and such without it looking like toys. (Look up how they did the Return of the Jedi space battle scene when it's just the massive field of aircraft coming at the camera)
Funnily also still have some bloopers, like in the first one some stormtroopers come through a door and one bonks his head on it. (Later they actually added sound of bonk rather than try to edit it out.)
My wife keeps trying to get me to watch "The Princess Bride" by telling me it's funny, but I won't be duped into watching something by that name. In some cases, I am perfectly happy to judge a movie (book) by it's title (cover).
Otherwise, I'm not really sure. I don't keep up with the entertainment industry much. We just watch the occasional redbox movie or one on netflix when friends are over. I'll have to think about notable ones that I haven't seen and get back to this thread.
Pretty much any movie made in the last 20 years that hasn't been on TV enough times for me to stumble across part of it.....

My wife keeps trying to get me to watch "The Princess Bride" by telling me it's funny, but I won't be duped into watching something by that name. In some cases, I am perfectly happy to judge a movie (book) by it's title (cover).
My two sons were very reluctant to watch it when they were 12 and 15, they now say it is one of their favorite movies. It is very funny.

South Park had a great episode about that. Cartman was basically Glenn Beck, complete with the chalkboard. He talks about how he met a tribe of smurfs and became one of them, essentially ripping off Dances with Wolves. Eventually Kyle's girlfriend steals the idea and sells the movie rights to Avatar.

For all the people who don't go out of their way to see movies, take $12 and go to the movie theater this weekend and plop your ass down in a chair and see the new Mad Max. I've seen a lot of movies, and in terms of action movies I think it's the best I've ever seen. It will add $12 of value to your day. It's not perfect, but I can't imagine the vast majority of it ever being topped. I liked the original Road Warrior a lot, and this Mad Max makes it look like a pile of crap. Road Warrior still has some elements that are better (like the whoa ending when you find out who the narrator is).
I usually wait for movies to come out on the small screen, but I'd recommend seeing this one on the big screen. And I saw it in 3D, which I'm not sure is good or bad. It seemed like I occasionally had trouble focusing on fast action sequences clearly because so much was going on. All I know is that it was awesome, so you wont go wrong with 3D.
I'm not an action movie fan. In fact if I'm looking for a movie, the action section is probably the last place I'd start looking because 99% of it is ridiculous and unbelievable. I don't like car chases. I don't like superheroes. It's usually just so ridiculous.
In terms of what movies I haven't seen, I do find myself seeing less and less of what's in. I think it's because they don't make 'em like they used to. Everything these days is a reboot or re-imagination of something you've already seen, and it usually ruins your original memories. Not so with with Mad Max. Of the originals, I only really liked #2 (the Road Warrior). And this blows that one away and makes me like the Mad Max franchise even more.

He already said it was a very funny movie, and it is. However, since you've already determined that you won't like it, you probably won't. It's based on the book, which is also good.
I also haven't seen any of the Transformer movies beyond the first one.

I saw Princess Bride in the theaters. I went in expecting a regular fantasy film. It wasn't and I was DYING because it was so totally unexpected. I loved it enough to buy the Blu-ray so I can watch it again periodically. Watch it.
Lol, I have seen all the movies you guys haven't and likes them all! With the exception of avatar, really no star wars? Come on now!!!! I'll be in line to watch the new one!!

2. The Notebook, or any other 'romantic chick flick' crap like that. Gimme a movie with explosions, car chases and a good fight scene or two, with romance sandwiched in between.
3. Frozen.
And the Princess Bride is really very good. Don't be put off by the name- it's a tongue-in-cheek sort of humor. It's not meant to be taken seriously. Go into it with no expectations at all, and simply enjoy the humor.

I refused to watch True Romance because of the title when my wife told me how much she liked that movie. We learn from our mistakes.

This movie and it's songs are Gods way of punishing us for everything we've done wrong. No one under the age 8 would ever intentionally watch it. But if you have a young child with a good memory ( in my case a 6 year old girl ), those damn songs will haunt you in your sleep. No amount of pleading or bribery can abate their need for any and all things Elsa and Anna. I truly hate that movie and it's cost me a fortune.

Ok, my actual answer to the OP:
1. The Princess Bride (which ironically was on TV this weekend, so has been DVR'd. I will report back later this week.)
2. Debbie Does Dallas ? I hear references all the time... I'm an IT guy.
3. Mad Max - the old one or the new one....
Why would someone choose not to watch. Indiana jones, OG Star Wars, and the matrix. Those are some of the best movies of all time and the first two define my heroes throughout childhood.
I suppose you guys didn't have GI Joes, play army, cops and robbers, or occasionally check out your friends oldest brothers playboy growing up either.
I haven't actively avoided Star Wars or Indiana Jones. I liked the first Matrix, but the second one was so dumb I lost interest in seeing the third.

You have no idea. That movie is one great big advertisement for new toys. The the songs are meant to torment you until you buy any and all things Frozen.

Well, I don't think you're missing anything with Ghost. I much preferred Patrick Swayze in Roadhouse, myself.
Powder was okay, in that weird-movies-of-the-90s sort of way. I think that was Sean Patrick Flanery's breakout role, but I could be mistaken.
Michael is a guilty pleasure of mine; it's one of those appealing movies that you can throw on in the background while you're doing other things.
