Not sure if this is really for cost cutting or because of inmate surveys. Though most times I'm at the store pork is the cheapest meat to get, and really, fuck what inmates want. You're in goddamn prison, meal choice should only be if you choose to eat what is served or to skip a meal.
In the end, maybe it means more bacon for me.
“In general we welcome the change because it’s facilitating the accommodation of Muslim inmates,” said Ibrahim Hooper, a spokesman for the Council on American-Islamic Relations, the country’s largest Muslim civil rights advocacy group. “We hope it’s not an indication of an increasing number of Muslims in the prison system.”
I thought there was a pig bomb issue in the U.S. An inmates only meal choice should be their last meal just before there execution.

I don't see that working out well in the long run, somebody will end up missing their bacon....

With all the money they save, they can buy more prayer mats...
Prisoners should eat better than me. I mean, they already get better medical care and education than me all for free!

I don't see why they get anything more than beans and rice -- maybe some lentils every now and then. If they want entertainment, let 'em watch 1970s-era sitcoms and variety shows. A little Sonny and Cher or BJ and the Bear (since Dukes of Hazzard are probably verboten now) would do 'em some good.
Since when has there been an impression that prisoners eat well? Has that ever been the case?

Depends on your definition of well. If you've been in the field eating MRE's for an extended period, then yes they eat very well. It's just institutional food, think of the worst hospital food you've ever had, and you'll have a pretty good idea, only you don't have an option of several items, it's one entre per meal.
Judging by some of the posts here, I'm the minority and think there are only a couple "classes" of inmate that should be eating worms and beetles, the rest need a decent meal to learn/perform whatever skill it is they are doing in order to be productive when they release (because most will). I can agree the military should be eating better than inmates.
They should eat worse than the military for God damn sure.
Our politicians shouldn't get anything more than military housing on our dime.

The federal government put pork roast back on the menu at federal prisons without explanation after a Republican lawmaker questioned claims that pig products were removed because of lack of interest and high costs.

Chuck Grassley (R., Iowa) penned a letter to Bureau of Prisons Director Charles E. Samuels, Jr, inquiring about the government’s decision to ban bacon, pork chops, ham, and all other pork products from the menus at its 122 federal prisons.
“To corroborate the validity of the claim that prisoners indicated a lack of interest in pork products, I am requesting copies of the prisoner surveys and responses that were used to support the determination to no longer serve pork in federal prisons,” the GOP senator, who chairs the Senate Judiciary Committee that oversees federal prisons, wrote. “Please provide any economic evaluations the Bureau of Prisons has relied on that detail the cost of pork as compared to beef, chicken, and non-meat products such as tofu and soy products.”
Grassley voiced concern that the decision would negatively impact Americans who work in the pork industry.
Ross refused to explain the quick change to the policy that put pork roast back on the menu Thursday. “I’m not cleared to say anything and I don’t have answers for you,” the bureau spokesman said.

Ugh, sounds like what I ate (along with the oiliest peanut butter around) after my sister was born. Dad lost his job after she had her second heart surgery before her first birthday and he took too much time off for them. My mom was able to make some good cookies with the PB and the cheese made ok grilled cheese sandwiches.

Nobody doing time should eat better than our military.
If they want to make their own decisions on their diet, then they need to keep their ass out of prison. Life in prison should be worse than living outside of it.
