SORRY.
I am unable to wish ANYONE a HAPPY Thanksgiving.

If i did the potential for someone to become offended that i wished them HAPPINESS, is appalling. Imagine someone wishing you Happy Thanksgiving if you were not feeling Happy that moment.
Why does one wish or what does one imply when wishing anyone a HAPPY anything?? Being put in the position of having to feel Happy puts a serious burden on those who do not or unable to feel happy.
Is it right to FORCE your feelings on anyone? of course not. So why please tell should we wish anyone Happy Thanksgiving??
Hell my feels just being FORCED to type HAPPY has put an unbearable burden on me.
I am not apologetic, or will i be, I will however request the Mods close this thread and allow us special SJW Snowflakes, time to recover from such horrendous projecting of ones individualism upon the masses.

We just finished dinner. The plan was to head up to WY to spend the day with family but I didn't feel like chancing the weather. We put together a decent spread last minute (thanks Walmart for not having a soul) and I stuffed myself. First time I've done this in 4 months but I'm not complaining. We've got a lot to be thankful for.

Spatchcocking...hmmm, new one to us. Trophy wife is intrigued. She has been doing that, without the catchy name, with other fowl for years. Looks like a new thing for next year. Or this year, when all the un-sold turkeys go on sale!

75 minutes at 450 and it's done and very juicy. My only gripe is it throws off a lot of smoke as it drips and splatters. Will need to clean oven tomorrow.

With only 3 of us we always have way to much food.

We ate at a friends house with his family and friends, had plenty to eat and there is still leftovers and a pumpkin pie that didn't get touched. Another couple of hours and I may have a piece. I am for sure going to be at the gym first thing in the morning.

I see 1/2 doz meals from that including soup and stock. One must be thankful they have the ability to put food on their table.

If you spatchcock your bird try putting it in a roasting pan on top of a bed of celery, carrots, smashed garlic and onions with 1/4-1/2 cup chicken or vegetable broth and cook at 400* to reduce the smoke. I go with a probe thermometer and pull when the breast hits 165*. The broth is just there to steam a little and keep the veggies from burning before the drippings get down to them. I hacked up my carcass and will put it in a stock pot tonight along with a smoked chicken that I've been saving to make stock and will assemble a couple of pot pies tomorrow to stash in the freezer.
