Going up 4th season, and I'm looking for a new place to take my game. I've used Meat Cleaver on 44th & Tennyson, but last year we got screwed on our meat (2 roasts, very few steaks, the rest ground on a 275lb hung weight cow). They charged .79/lb hung weight.

I've heard good things about Steve's in Arvada, but they charge $1.10/lb hung weight.

I also heard good things about the Arapahoe Meat Co. in Erie. I haven't been able to find a website for them. Does anyone know what they charge?

Also, if I debone my meat, do they charge the same price/lb?

If anyone has any good info, I'd appreciate it.

Also, I was thinking of getting my steaks cut thicker (1-1 1/2" thick). The standard 1/2-3/4" steaks get too well done too quickly for my taste. I like my meat medium rare and tender...not well done. Is that a problem with big game meat?
