It depends on what you're wanting from the rifle. There are less expensive ways to dip your toe into the platform. What you want from a rifle may also change once you get into them. I bought my first AR, but then built my next. There are soooo many options.

I'm not a big bore guy, but the popular opinion is that 6.5 creedmore is better than grendel. There are many articles on the interwebs about this, don't take my word for it.

I would always recommend going with the standard caliber if it is your first foray into the platform.

That being said, I enjoy my 6.5 Grendel.

But if I only had one AR style rifle it would definitely be a 5.56.

Like Ray said, stick to 556/223 to start. Learn about the platform, lots of options. Besides AR's tend to mutiply.

I don't think there are any bad choices and I really like the 6.5 Grendel, but as stated above starting with a 5.56/.223 is far more practical and affordable. I'd say that 9mm is also a good choice based on the affordability to shoot. This coming from someone who has 3 9mm AR's, 2 5.56/.223, .204 Rurger, .224 Valkyrie, .22 Grendel, 6.5 Grendel and 6XC. I had a .308 AR10 as well but a coworker wanted it more than I did so i sold it...so I can build another. Next up will likely be a 6mm Grendel.

6.5 grendell is a great choice for coyote hunting for sure. I like it for that at least. It is more expensive to shoot then .223. That is a big consideration for lots of people.

I built a 6.5 Grendel for my first build. I love shooting the friggin thing. The caliber is minimum size for hunting deer in Colorado and is dead accurate.
