I will be shortly jumping into the whole RMR pool.
Although my mind yells iron sights only, my aging eyes beg to disagree...

I do apologize if my these questions have been answered already, my search-fu is not the best...

I will be getting soon (hopefully) a19 MOS Gen5 .

Planning on a Holosun HS407C-X2 (shake awake, solar backup, larger window etc...).
What is the consensus on it?

Which of the MOS plates is the correct one?
I could not find any info as to whether the adapters coming with the MOS lineup allow a straightforward install.

Am I correct in saying that MOS installs (I don't want to deal with the whole slide milling and refinishing deal) require switching to suppressor height iron sights?

Yes all MOSs Glocks utilizes an adapter plate between the slide and the optic. So generally the optic will sit higher than if you get it milled. I believe the Holosuns use the same footprint as the RMR, but I might be wrong. I have a Holosun 507k on my Glock48 and it doesn’t not need suppressor height sights.

I am slowing adding RDSs to my pistols as well. My wife and kids enjoy shooting them better and I find that generally newer shooters enjoy having a basic red dot to acquire.

The RMR plate is correct, holosun was smart and picked a footprint that already had a following. Their larger red dot tubes, the 403 and 503, use the aimpoint T footprint for mounts. Smart move.

It's got a chevron sight and a ring that disappears at full extension, so it's alot easier to find the dot when you're handling at odd angles. It's got all the standard holosun features.
