Late notice I know but it looks like we're making a trip over to Greeley for some Mexican eating. The place is the one I've raved about in the past here called Hope Mexican Restaurant. It's inexpensive and great authentic Mexican food. It's on 1029 9th Street in Greeley and we're planning to be there at 1:00. I think Batteriesnare from here might be making it and I'm bringing another pro fun buddy of mine who isn't on the forum so it should be a good time. Best bet is to email me directly to let me know you'll be coming: jeremyhelling (at) gmail (dot) com

there was a place about 1 block down from lakeside that served their food like that. the $6.99 smothered chucken burrito was hanging over the edge of a regular size dinner plate.

I like the name "Hope Mexican" ....

What is in a name?

Actually, way back in the day it was El Taco which was a great name. Told people what it was even if they never heard of it before. You get a fair amount of drive by business this way. Then, the current owner split from the previous co-owner and since it was a bad break-up the previous co-owner kept the name which was registered in his name... just to be a dick I guess. The current owner then, in all his wisdom, went with 'El Rodeo' for a name. He doesn't spend a dime on advertisement and so he rarely has much business because people don't know. I would sit and talk to him all the time about how to get his name out there because I wanted to see him do well since he made such great food and one of the first things I suggested was changing the name. He HAD to go back to something that let people know what was inside that place. After what was years he finally changed the name..... to Hope Mexican Food Restaurant. I don't think he got it. At least it has Mexican Food in the name now so that's a step I guess.

The food is kick ass though so don't let his lack of business sense scare you away from his ability to cook up some tacos. [Beer]

I was wondering how long it would take for someone to recognize that photo! I've been fascinated with that shot since that album came out back in the 70's. That's my Holy Grail of Mexican food right there.
