I used to raise Buffalo. The last 2 animals I have slaughtered have been beef. I didnt know we still had Buffalo in the freezer. So, my wife pulls a Buffalo roast out of the deep freeze that is dated January 24, 2006. No, freezer burn. I personally, slaughtered it and butchered it, so I can say it was done right. Our deep freeze is set at negative 20. The meat has never been warmer than that. I know its safe to eat.
Would you eat it?

Thaw it, make sure it's not turning green (or greenish hue) and if it's gtg, cook it! Make sure you get it above 165 degree for at least 15 min.
I remember eating slaughtered cows that was in the deep freeze for years. I turned out ok. herp-derp! HAHA.

I have 1 pound of speed goat in my freezer left from 9/07. I am saving it for a rainy day when I have nothing better to eat [Beer]
I would agree with Bear. Might be more a question of "taste" than "safe".
My Dad was kind of notorious for "forgetting" things in the freezer for a "few" years..

esp in a deep freeze
a regular freezer it would be freezer burned to death, but it will be fine.
You might lose some flavor, but you won't die (from that anyway)

if meat is wrapped in paper and frozen they say it will stay fine and fresh for 2 years. still edible after that, but the freshness won't be up there.
We just got a food saver for vacuum sealing and it says that meat is good and will maintain its freshness for 3-4 years.
I have had elk 3 years old and had no problems at all.
only thing I would recommend would be to cook it all the way through. med-rare steaks might not be the best.
You proved once again why we killed off the buffalo and now raise beef.
For freezer burned meat. Try sealing the meat in a crock pot cooking bag with about a 1/2 cup of water. Add some dried onion soup mix or ?
Seal the bag with the minimum of air and let float in the crock pot full of water. This will keep moisture in the meat and it will be fork tender after several hours.

no, I think our house allways smells like that. we have 4 boys 6 and under 2 of them in diapers, and someone is allways shitting. that and, i shit alot.
I'm no expert by any means, but we've had meat in a deep freezer for 3 years and still ate it. It looked and smelled fine when it was defrosted...
Everything I've read is what others have mentioned; it may not be as flavorful...
There are reports and stories of people eating prehistoric frozen animals....
So, IMO, as long as the meat isn't rotten its okay to eat.

I use a foodsaver to vacuum seal my elk/deer/field goats, and I've had some in my big freezer for 3 or so years with no problems. My freezer stays at -5.
