This is what my google-Fu came up with. Have no idea if it's right or not.
I have only seen that on the Yost-Bonitz 1* custom 1911

I'm pretty sure it means the same thing it does in general.remind yourself that you only have 1* (one as to risk). It's big with combat medics, away guys and what not. Just way of keeping yourself aware that survival is top priority.

They've been known to put it on a few of their full house customs but the one you're thinking of is a bit different.

1* = One As-te-risk = One Ass-to-Risk.
Something that's earned, rather than just a cool saying. Earned by putting yourself in a dangerous situation for the benefit of others... a cop I know was in a shootout a few years back, and earned his right to a 1* "badge" by surviving that experience and then continuing to do his job.

If that is what it is for than why the heck would a gun company put it on a gun kind of disrespectful in a way.

That's the same logic that ends up in lawsuits with gun companies cause someone used their gun to defend themselves.
If a cop has the option to carry that gun and has earned it, or a soldier coming home from Asscrackistan wants something like that, by all means go for it. Its the keyboard commando idiots that have one in the gun safe in their basement cause they wanted the most badassest gun they can find that don't respect it.

Darn it, I thought it had something to do with The Big Red One, good thing I didn't order the grips.
