What type of competition are you wanting to use it for? Different games require different setups.

Dawson or Warren/Sevigny fiber optic front and black rear sights
25 cent trigger job
round out and polish the safety plunger
Wolfe competition spring kit
13 lb ISMI recoil spring
Stainless Steel non-captured guide-rod (not if IDPA)
USPSA limited division, you can add a mag well and extend the mags. Arredondo or Taylor extenders are the only two I trust and add the 10% Wolfe mag springs.
OR...
just change the sights and shoot the F out of it. Either works.

I was thinking a 3 gun setup

Most 3-gun matches don't have a scoring difference for major versus minor, so you might be better off with a 9mm but that wasn't the question.
Unless you are going to sink the money in to build an open gun, I would suggest a fiber front sight, .25c trigger job, and then add a Zev Tech V4 Race Connector http://www.glockworx.com/Detail.aspx?PROD=155934 but run the stock springs. Then just take it out and shoot it a lot before you decide what else you want to do to it.
Edit: when I reread this the above wasn't clear. I would do the 25c trigger job, including rounding the safety plunger and try that to get the feel. Then spend the $15 on the connector so you can have a comparison and decide that you truly do like the connector better than just the polish. If not, let me know and I will buy the connector from you.
Grip tape or AGrip is easily reversible if you just have to try something else. I would hold off for a while on stippling, grip reductions or any of the more radical modifications.
