SAMs Club carries a brand of freeze dried foods. Although as far as sampling, you would need to purchase a "30" day pail of meals.
As for just "meats", the smallest order I have found online is 2 - #10 cans. According to the manufacturer, 1 - # 10 can is 23 servings after reconstitution.
All you need to make your own is a large enough vacuum vessel that can be chilled to sub zero temperatures.

Walmart has some of the "meats" in their new section in #10 cans as well (Chambers & Parker)...I haven't tried any as of yet, but will update when I do.
Rapid fire bunker used to do sample Saturdays of the freeze dried stuff they carry, don't know if they still do
I like shelf reliance thrive myself. Don't buy it online as you get a better price buying through a distributor. Pm me if you want the number for the lady I buy from. I'm not profiting off of it I Just like there products.
The Wise Guy (distributor) is usually at the Tanner shows, at least the few that I went to before I stopped going because of the stupid crowds.
I bought a bucket from "wise guy" and then did the math. It's like $5 a meal that's only 210 calories. Ouch!! I have seen videos on YouTube to dehydrate chili, you could put it in some mylar with an oxygen absorber. I've heard that you can dehydrate browned ground beef if you rinse all the fat off. If you dehydrate meat the fat is what makes it go rancid. I recomend the excalibur dehydrator if you go that route. You could always can meat.
