Rabbit is very tasty. Domestic is more tender, mild flavored and larger. I prefer wild, just wish they were bigger. Wild rabbits carry several parasites, harvest after freezing temps in the fall.
Horse ain't bad neither. Just gotta cook it right.
Rabbit always reminded me of squirrel. Excellent in gumbo.
My pa used to put rabbit and squirrel in the Chicken Booyah (it's a Wisconsin thing)
Half the people noshing on it didn't have a clue. The other half could tell them apart.
For full disclosure, I brined my rabbit with a ton of salt for a few hours. I don't know how much that affected the taste, but it was wonderful!
