Yeah, his name on Arfcom is HockeySew. He used to sew all his kid's hockey equipment and has industrial sewing machines. This little gem is what I was working on tonight. Accidentally sewed the part with the D-rings with the back side facing front. Doh.

Mine is going in the oven - Unfortunately, I don't have a smoker. Now a question, sear in the cast iron before baking, or crank up the oven to 500 and brown after baking? I usually sear first to lock in juice. However, I've seen some mighty good looking roasts baked normally at 350 or so, then finished under high oven heat to get some crispness on the face.

Since it will be just wife, dog and I this year, we decided on Mexican food for Christmas eats.
A few years back at one of our annual events, they had a mandatory session called, "Work/Life Balance."
There, they tried to explain the reason they don't let anyone roll over all that PTO or pay us for it. On the flip side is the employee/owner (we are 100% ESOP) that is in high demand and has difficulty taking all the PTO they might be entitled to.

It was a long drive yesterday. We made it to the Illinois border earlier than expected and I yelled FUCK ILLINOIS and we decided to drive "through the night". Got to my parent's place in Michigan around 2:30am. Glad to be here with family, but found out today that my mom is going in for an EKG and chest x-ray today because she's been having persistent chest pain for a few weeks.. If you're the praying type, I'd appreciate a quick prayer for her health. I hope you all are doing well and if you're traveling, stay safe!

When we do a rib roast in the oven it's high temp for 20 -30 min then down to 325 OR 500* 30 min then turn off, let roast sit 1 - 1.5 hrs. I also do a salt crust to seal teh juices in.
not a roast but some cluckers just of the smoker @ 400 1.45 min.
