Nothing tacos can't fix....
If you've ever had their carnitas, which is ONLY carnitas, pico, and guac, the fake amounts of meat start to make sense.
There was a store on Pearl Street in Boulder that sold nothing but clocks.. shitty clocks. I never saw anyone in there.. they just closed a year or so ago after 15 years or so. I always suspected it was a laundering operation of some sort, or a trust funder.
Burrito and 8 ball to go?
A lot of things like that survive because they own the commercial real estate outright and they have such low operating costs (e.g. not paying themselves dirt) that they can continue on with their hobby business until they themselves turn into dust. The only operating cost literally becomes utilities (and property tax), and keeping the lights on isn't that hard to clear for even the most niche business. ($200/month, at most).
Maybe I can try it out this weekend. I know it's burritos from Lafonda tonight though.
