IMHO, see if you can make her see the error of her ways first. If you can't, I'd say lose her on principle, but I'm an asshole. Alas, women who appreciate such things are all too rare in today's (alleged) society.

Explain to her that you're hunting to harvest the animal and it's meat, not just a trophy. and that hunting provides a needed resource management aspect - that if you didn't kill the animal it would most likely die a lonely, horrible death due to starvation because of under/overpopulation.

If she doesn't get that, serve her some elk steak some night. It's mighty tasty.

Everyone here makes valid points... I'll see where this goes, maybe take her shooting with me, but definitely serve up some elk sometime and prove that PETA is correct (that's People Eating Tasty Animals).

it is a fine line you are walking, plenty of women and men will say what they have to, to get you hooked and married. after the fact they will try and change you into something else. I am not saying everyone, but I would make sure she is on board thru education of her by you, before you find out the hard way. it can get ugly later on, and you can and will loose alot. I know, and I am sure plenty others here know also.
