I've done Kingston before, and I'd do it again. It's a longer trail, but climbs pretty high and has awesome views.

Lol, we did Chinns just last weekend. I even posted pictures of me on Chinns lake in this thread from last weekend. Chinns is definitely the best trail in the area I think.
The Empire loop is always a fun run, Red elephant, mill creek, and Bill Moore lake.

Can I do it stock?
Yes sir. Only has limited slip in the back and weak clearance. A good spotter should be fine. As long as I can get back out solo in case my wife wants to stay and hike around.
I don't want difficulty to deter anyone tho. That trail damage sight has some good pics and descriptions of the trails, so if a trail looks too difficult for anybody, we can keep looking. I'm also willing to go further South (285) or North Boulder, Longmont area.
The back end of my truck works pretty good. Has some kind of positrack setup or whatever GM used back then. The front end is open. I lack a bit in the ground clearance department since I a only running stock tires (265/75/16) and my wheel base is a little long for really tight turns.
The wife seemed a little excited too. She will probably tag along as well. Assuming we aren't dead tired from the ATV trip tomorrow.
