While driving around the west this fall we saw a few factory conversions. Either we're going to convert a sprinter or transit, perhaps buy a bigger truck and hybrid trailer for snowbird times of year.

That's impressive! Chamber vacuum sealers are a giant step up from the vacuum sealer I just got. I couldn't justify the cost but if I were 20 yrs younger and packaged whole beef that would be the schnitz.
A question, does it seal right around the meat cuts or only along a strip? Are you packaging commercially too?

Nope. Building tower bases for work. 1/2" steel doesn't bend real well, which makes it GREAT for supporting towers.
That's just a 10' stick of Rohn 55G. I have used 47 of them this quarter alone. I am never far off from them with my job.

Dodge effed up making it so short between the body and door, and farmed out the originals to the cheapest bid that used low strand count stiff wire. Very common problem on the 4-door Dodges. Not sure what model years were affected.
The aftermarket Dorman garbage I put on the first time lasted two years if I recall. Driver side was broken wire again (window) and both rubber boots disintegrated.
Lots of guys just splice them back together, but I wasn't messing with that.
Last night we made a cross-rib roast. 40 minutes +10 more for the spuds. Oven roast would take about an hour if you were rushing it, should be a 3-4 hour roast at low temp. It was better than the last same cut roast we had in the crockpot for all day.
Except for the massiveness of the 8QT, the wife is loving it.
