I'm going to go out on a limb and say this likely wasn't demanded by vegetarians so much as good old fashioned capitalism of the festival's organizers trying to expand the market.

That festival is a good time. Honestly though, who cares if people are vegetarians? I've got friends who don't eat meat and they're not shoveling tofu at anyone but themselves.
