If you want the BEST biscuits and gravy in Colorado you need to goto Steubens.
It's ONLY served on Saturday and Sunday from 10am to 3pm and it costs $6

Steuben's? I work about a block from there. Ate lunch there one day and wasn't terribly impressed. Maybe it was the yuppie atmosphere, or maybe I was just "off" that day. May have to give it another chance. Struck me as a place where the "Obama love" was thick in the air, but that whole area around there is like that.

The B&G at The Pancake House was pretty good. The biscuit wasn't incredibly noteworthy, but the gravy was awesome, and they'll put it on other things to (cowboy omelette, etc).
Just make sure you call ahead. The two locations I have seen tend to be pretty dang busy.
