I took that 5+ lb roast. let it dry age in the frige 2 days, before cooking yesterday. What a difference. You let the roast or meat of choice (NO OBC this is not about dating) sit uncovered 1-2-3 days in the frige. The spouse and friends over last night said it was one of if not the best one i've cooked.

Don't see how can go wrong with dry aging beef a few extra days.
