That's not something I've considered before. Smart idea.
Guy on another forum I am on bought a new Dodge 4500 in the Springs and went that route. Of course he has a custom flatbed and Alaskan camper mounted on it, but given your plan of use I would definitely pursue it.
I would even get on a couple of the RV forums and see how it is that so many of that crowd registers out of Montana or a couple of other states when they aren't true residents. I was amazed at how pricey it was to register my mid 90's F350 when I moved here.
RV policies can be less because they are used less by definition as well. No one daily drives an RV.
If you consider a diesel, and it's likely the case with that old meat wagon, turbo is your friend, and older pre-emissions are even better. If you can't get diesel, you can run a lot of other stuff in them. ATF, used oil, etc. in a pinch. Would make it a little more versatile in that regard. A small generator would also be a wise complement as well.
