Well, what do you use in the kitchen everyday?
This was all I used, for cooking, in the kitchen for about 18yrs. I cook at least once a day...
A Henkle 8" chef, Henkle 4" paring, Oxo bread knife and my Great Grandfather's fishing knife. The 8" has been re-profiled once and the the paring twice.

In the last couple of years, I started getting into Japanese steel. http://theomegasector.com/public/sty...ault/drool.gif The Shun 8" chef knife farking rocks. The Mercer Nakiri slices like a fiend.

The Winco veggi chopper is okay but too big. The Russel Green River is excellent for taking down big meat. It's about thirty years old and working on a new handle.
