I think in my case, it would have to be my Madsen M47 Colombian M1958 rifle. It's chambered in .30-06 and has an interesting set of features. Rear peep sight, split rear receiver bridge, odd safety, integral muzzle brake, and a hooded front sight. Something in the neighborhood of 5,000 of them made.
My most interesting surplus piece is my P-17 Enfield in .30-06. When my dad was a young man he attended the gunsmithing school in Trinidad Colorado. One of his assignments was to sporterize a surplus rifle. He put this particular rifle together and then gave it to my Grandpa as a gift. My dad built it in 1960 when he was just 18 years old. Even back then he had remarkable talent.
These days, sporterizing a vintage military gun would be considered an act of heresy, but back then it was quite common.
Anyway, I had shot the rifle when I was a boy and my grandpa told me how proud he was to have it. When he died I asked if I could have it. I have treasured it ever since.
The triplets (M91/30-M38-M44) Dates on them suggest they may have been at Stalingrad/Leningrad to Berlin...
Two Russian Tula 1951, 1953 SKS, and my newly acquired 1943 Enfield. I would have to say the Enfield has the most charm.
My most recent purchase which is a K98. I have been after one of these forever and finally found a nice one locally. 1941 manuf. still has waffens like I really wanted. gun looks near new, bore is amazing as is the rifling. I ordered a 340rd. tin from AIM and can't wait to get it out to the range and test this baby out![Beer]

Interesting bits are:
Mosin has the sniper proof, but no evidence of a scope ever being fitted, and it was unfired and unissued when I got it.
The SKS is also unfired, and never packed in cosmo. Early KBI import. What I like is the striped siberian birch stock. Maybe not rare or anything, but cool factor is there.
Heck, this is the main readon for a C&R - to get interesting guns, one with a sense of history.
I have an 1891 Mosin Nagant with German capture marks and Finnish army marks. It went to a lot of places.
Any Swedish Mausers are cool and I've managed a few good ones. I have a few that had diopter sights put on them for shooting clubs - their version of CMP.
I think my real favorites are several kar98K rifles that started as WWII German and ended up in Israel.
A Hakim is fun to shoot since it is so big & loud.

I picked up a Webley Mark VI at a show in New Mexico for 250 bucks. It was a converted piece to shoot 45 acp in moon clips. Lockup was tight, the old man said he just didn't have ause for it anymore. The funny part was that at least 30 people at the show stopped me and wanted to know if it was for sale. I had offers going up to 600, but I refused. I really always wanted one. Its such an ugly little pistol that I find it beautiful. Besides, I was really excited to shoot it.

Cool, rare guns are fun. I especially like the stranger designs. I had a Rasheed but sold it. Still have a Ljungman & Hakim. I also had a Finnish Lahti pistol.
Guns that have with a varied provenance are also like holding history. The German rifles that became Israeli mausers are an example and I still have some

1943 M-44, laminated stock, all matching 3 digit serial. 1944 M-44 Tula, laminated, all matching 3 digit serial. Styer M-95 with both Nazi markings and Russian capture marks. An Enfield #1 Mk III dated to suggest use in both world wars.
My 1937 M30 Broomhandle Mauser. I still shoot on occasion when I can find the ammo cheap enough.

I would say a toss up between my Mauser c96 or fin mosin sky. Not super rare but fun to look at and show people the craftsmanship. Though I’d probably say my favorite is the Mauser.

I am not really into old surplus guns.
But, my 1943 Enfield Deslile is my favorite. My M1 TommyGun gets huge fun points while my 1941 Mauser Luger with a serial number of 69 gets the most CDI points.
