Friend came over with his worksharp to do some scissor sharpening. Which of the 2 W/S would you suggest, the basic worksharp, or ken onion edition? Not interested in others, UNLESS it's an equivalent, performance wise. Thanks

I use one of these, but it is overkill for most. It will turn a piece of 1095 stock into a razor with a little work and a forge. Oregon blademaker.
Ken Onion edition is much different than the normal deal. I'd go Ken Onion
The k/o has more adjustability as to angle than the basic one. On the basic, you're stuck with just a couple angles
I have the basic (a gift). A friend has the k/o. I sharpen my good stuff over there.
I have an Onion and have not used the basic one.
The model I have works excellent on everything from my Swiss Army to a 10" chef knife. I was in the restaurant business for a decade so I know the value of a sharp knife.
I had a broken belt in the kit. I contacted them to buy a replacement and they sent me an entire set, no charge.
My only complaint is the thing is built for right handed operation with no way to reconfigure for lefties. Not a deal breaker since the entire world is set up that way.
I sharpened my neighbor's knives for her and later that evening I had to take her to the emergency room for stitches.
I recommend it for everyone, except maybe old ladies with shaky hands.

Incredible sharpening system that is stupid flexible. 2" penknife? No problem- 10" Bowie? No problem.
Uses single Edge Pro type stones so you don't have to buy pairs of stones like you do a Wicked Edge type system.
You will never overheat an edge like you can do with a KO, belt sander or paper wheel.
I debated the purchase for a long time but I am glad I bought it.

Not familiar with them, but can the ken onion w/s etc do bigger things like mower blades? Or just be happy with an angle grinder on those?
They have a separate attachment intended for things like mower blades and axes; costs about $50. It is very aggressive.
I have the blade grinding attachment for chef knives that uses 1"x18" belts instead of 3/4"x12". Had to buy it as an accessory at the time but they now bundle it as the Elite Sharpening System for an extra $50 over the KO.
I think the Ken Onion version goes down to 12˚. Beveled or convex edge?
I have the original. It does a great job. Got it before the KO was available.
However, I would get the KO if I were to repurchase today.
I have sharpened mower blades with the original with great results
I have the KO version and added the belt grinder attachment - if I did it over I’d only get the grinder version. It does a fantastic job with all my knives. You obviously have to work a little harder to keep the angle consistent (ie the blade level) but I find it much better at keeping the tips from rounding off.
I have whetstones, traditional steels, automatic grinders, special stone systems with the angle holding thingamajobbies, and those diamond abrasive set-angle systems (Magic Chef, KitchenAid).
I usually just use the Magic Chef or KitchenAid if I'm touching up a kitchen or paring knife. I used to use the steel for those, but I find the small units handier.
I might break out the stone system with the angle thingy if it's a new blade and I want to contour it my preferred angle.
I use an automatic grinder for things like lawn mower blades, axe/hatchet heads and lawn/garden trimmer tools.
I haven't had to sharpen my machete yet. It'll get the automatic grinder, too, most likely when it needs it.
I also have the KO version and the grinder attachment, both work great.
I have the Ken Onion as well. You could have borrowed it, if you still lived here.
My CPM-S110V steel knives are a royal P.I.T.A. to sharpen. It holds an edge like a boss (I used a single 2.5" S110V knife to do a bull moose), but getting it back to razor sharp takes a lot of manual work. I've been considering a grinder.
Is this what we are discussing in the thread?

That looks like the one I have. Works awesome even on tough to sharpen steels. It does take a little dexterity on your part to use it successfully or you do run the risk of rounding the tip or getting a wunky edge. I managed it just fine but I had a coworker that got one and the tips on all of his blades were rounded off pretty bad after his first attempts to sharpen. He was kind of a chimp though. I?ve had nothing but good luck with mine with me operating it.
I just used mine about ten minutes ago. Neither my chef nor my santoku would slice mushrooms smoothly. A few passes and they are like new.
All right, thanks for the verification. Asking for one for Christmas.
Only the free range ones on my lawn. [emoji23][emoji23]
