It doesn't unless you want to die painfully. They want to stay alive and experience life even in this messed up world they live in.
Yes it does matter. Anyone who is bitten, quickly dies and turns. As evidenced by them cutting off Hershal's leg (and Rick's hand in the comic) to save him.

Anyone who dies turns to a walker. Only way not to is if the brain is damaged.
It's a trigger effect. Like [IMHO]. everyone has cancer, some of us it activates then need to do something about. others never have an issue.

The show is fundamentally flawed. However, it still doesn't touch the king of plot holes and ludicrous non-sense: Burn Notice.
The only hole i paid attention to was Fi's. The debate in this house was if she ever wore panties, based how little she wore a bra.
