    One of the things I miss from being stationed in England - the cheese carts in the town square.
    a good Blue or Dubliner for me. My wife is into goat cheese - I don't like the way goats smell, so I can't do it.

    I've yet to make cheese curds, but from what I've read/seen, it looks pretty simple.

    Well, I was, uh, sitting in the public library on Thurmon Street just now, skimming through Rogue Herrys by Hugh Walpole, and I suddenly came over all peckish...And I thought to myself, "a little fermented curd will do the trick," so, I curtailed my Walpoling activites, sallied forth, and infiltrated your place of purveyance to negotiate the vending of some cheesy comestibles!

    It's amazing how your tastes change as you get older. I was in Wisconsin for a swim meet when I was in high school and yelled at at Subway because I didn't want cheese on my sandwich. Now I will sit down with a good Blue, Gouda, Chedder, etc. I love the stuff.

    One of my former LT's would go back to Wisconsin to hunt every year and would bring back cheese curds. We started deep frying them, then wrapped them in bacon and deep fried them. Good stuff.

    One of the best side dishes I ever have had is Blue Cheese Au Grautin potatoes.

    Got that right. Warm, wet, and squeeky. Just how I like my women.

    P.S. You can pop aged curds in the MW for a few seconds to bring back some squeek. If they don't, they were too damn dry to begin with and already crap. Curds also freeze well if needed.

    Safeway, in the specialty cheese section. The deli guy turned me on to these.
