Chicken & dumplings. I grew up eating them in Chicago, but when we moved here mom says the recipe doesn't work. The dumplings just fall apart, evidently due to the altitude. There are recipes that do work here, but using things like canned dough. A real dumpling is a big heavy chewy/spongy ball of doughy heaven. Looks like a piece of cauliflower.

I told this to a family the other day that just moved here from the east coast, and I thought the kids were going to cry. They said it was their favorite recipe. The mom comforted them and said, "he's just joking baby, he's just joking. We'll figure it out." I don't know if it can be figured out. I'm sure my mom has tried dozens of times.

I lost my dad years ago and just recently lost my grandma and my MIL all within two weeks. I miss them all terribly right now... sorry might have been a little bit of a debbie downer now.

I miss the simpler times in Colorado and miss youth, getting old sucks.

I really miss going to just about any store and finding .22 shorts, longs, long rifles, or birdshot, and plenty of it, for well under a buck for a box of 50!

I also miss being able to find old used Harleys and muscle cars for cheap. Back in my yoot, $500-$1500 could get ya a Panhead, early Shovelhead, or just about any kind of 60's muscle car.

I also miss my job in telecom working for Global Crossing, before Level 3 bought it and threw us all out in the trash.
There's a lot more of us ugly mf'ers out here than there are of you pretty people!

Isn't or wasn't there a Bojangles in a gas station off of Castle Pines Pkwy and I25?

How many remember The Riv, off of Colorado Blvd, behind Celebrity Sports (on Kentucky, if I remember correctly)? Great happy hours, and very good food, IMHO. Perfect divey atmosphere. Puerco Especial, I can almost taste it.

There is another place that calls itself The Riviera, in close proximity, but do not be fooled. No way, No how. Different owners, different menu, nowhere near the atmosphere.

I don't know but I'm gonna find out with a quickness!

Overall my Mom was not a great cook. But... she made potato salad that was to die for. I miss that. And my Dad's advice that was always spot on.
