The last couple cycles, we've let the tags expire on the truck that isn't driven that often. Let em go two years, then renew. Penalty caps out at $100.

I've saved quite a bit so far and haven't got a ticket yet. I don't recommend it, but when I do get a ticket someday, I'll still be out ahead. Crazy. (It still has 2014 tags on it, btw).
Many years ago in Texas, I would not renew and just wait till I got pulled over. When you showed up in court with new registration, they slapped you with a $10 fine for court costs. The bonus was that the DMV did not back-charge you for the months you were expired - just gave you new month and year stickers. I'd go anywhere from 3 to 9 months for free.

They caught me once at the DMV because you have to sign a statement that you have not driven the vehicle while it was expired. I signed the form and then realized I'd left my proof of insurance in my truck. I went out to get it and the DMV lady watched me through the front window. When I got back, she asked if that was the vehicle I was registering and then tore up my statement and back-charged me - cost of being stupid.

Later, they got smart and back-charged to your last registration expiration no-matter-what.
