So I am pretty sure I'm going to need a plumber to run the supply line and drain line back. But then the cabinet will need to be cut and fit. I want it to look really nice, do I need a carpenter for that? Never done one of these before...

They're pretty easy... The problem is going to be the drain. Running the water to it is easy. They require a very specific drain unless it had a pump. Meaning a certain distance and drop or you'll need a pump, if the drop and distance is too great.
Personally out of all the ones I have dealt with (office and boss's house), I would get a pump to drain it. As we've had to get pumps in all of them. I HATE the ice machines with built in filters as they want it to replaced and will turn it off if you don't, even if the filter isn't 'full'.
Cleaning them is important due to the mineral content of the water here.
The supply line can be done yourself as they have the kits.

You could use a collection tank pump in a cabinet below,like some central AC de-humidifiers have. hidden drain line from the ice maker to the tank pump and the pump exit piped to the sink drain hidden in the cabinets.

We just installed one at our office and took out a cabinet, cut filler pieces out of the old cabinet and centered ice machine in opening. Water line was easy and we used a condensate pump for the drain and pumped it to the dishwasher hookup on the garbage disposal.
Nice, this one supposedly comes with a built in pump, so hopefully that part will be pretty easy. From what I've read, I don't want to locate it right next to the dishwasher due to the heat, too. I guess as soon as my wife leaves town, I'll just open it up and see what all it came with. Maybe it's something I can slap together after all...?
