Archery in the wild is probably the best place local to Boulder, and JAX is also pretty good depending on who is working that day. They have both have a good selection and will let you try before you buy at their range.
Bow technology has plateaued over the last 5 years and advancements are very minimal. They are trying like hell to sell bows that have a 3 FPS faster IBO and maybe that 1% difference is worth $300 - 500 additional to upgrade to some people, but for the average shooter any bow made in the last 3 years will perform exactly the same. The shooter is by far the greatest factor on a bow as long as it is properly tuned. Like cstone said, it is all about getting a bow that is comfortable for you and putting as many arrows down range as you can.
