Have you ever built an AK or any other rifle? You could probably do it yourself with some minimal tools. you don't need to rivet anything like an AK so it comes down to pressing in a barrel, drilling the pin and then pressing the barrel components.
Jeff at HillBilly firearms is very well respected for his Galil work.
He usually has a long list of guns to be built.
He even does some custom work.

Also, Galils are threaded barrels, not press in.
They require indexing and a mill cut for the extractor, once you have the barrel set and headspaced.
There is rivet work for the trigger guard.
