I recently got my kid ruger 10/22 bull/match barrel and we are looking at an air/pallet type of rifle as well.
I am thinking about 10/22 co2 pallet type of gun at this time.
Here is my experiance, learn from my errors thing.
Started with a cheap pistol and rifle combo. Pull to cock, single shot. The pull was too heavy, so I had to do it. Not ideal. Later we got a green 1911, some deal pull to cock, but he was 8 or older and was less of a deal. Next got a battery powered m4, plastic, not top of the line.. That thing is fun and a blast. At 15 got a co2 1911 in metal. Totally fun. When he takes a break from studing, he goes and lifts in our basement and occasionally you hear the co2 gun just go mag dump.
Recomend plastic battery powered rifles. CO2 handguns, not sure if they make battery pistols.
I looked at green gas vs co2, but fir the occasional fun I thought green was no go. Green is propane and did not want that in the confined basement. Also, check if airheads in Erie is still around. Its an airsoft field, and I got the metal 1911 there. Price was fine, guy was very knowledgeble and I would pick his brain.
I don't know how much you are wanting to spend, but there are TONS of options.
The gun I'm going to recommend is not good for a 6 year old. But it would work for a 11 year old. I was with a bunch of 10 and 11 year olds this past weekend that ran mine and ran it well while we shot at each other for a few hours. All have grown up with guns and are very good with gun safety. This gun below is NOT a toy. It hurts on bare skin. (a 13 year old was using mine and shot me square in the nose from maybe 30 yards away during one game...it was a bleeder.

Without a doubt, this is one of THE best M4 style airsoft rifles if you want something that will last and if you think there is ever a chance you may get into customizing. It is a VERY good rifle right out of the box and will last a very long time. It can be used as a perfect trainer for an AR15.
This rifle is a bit fast with .20g bb's but if you get some slightly heavier it is just right.
My 6 year old likes to shoot it, but she needs supervision, because it is not a toy. The full auto makes everyone giggle.
But more generally, all the Lancer Tactical stuff is a good bet if you want something a bit more basic. You can't go wrong with any of it.
Avoid the cheap AEG guns that just have a BB reservoir...they tend to jam a lot. Get something magazine fed. High capacity magazines work great for the younger kids because they don't require a speed loader like the mid cap ones.
Look for M4 guns that have the battery in the stock. Much easier to remove and charge than those with the battery in the front grip.
Pistols you're pretty much stuck to single shot if you don't want gas. If you go gas, Green gas is slower than CO2 and won't hurt as much.
If you intend that the kids will just be running around in the back yard goofing around shooting at each other, you should consider just getting the single shot stuff. They'll have tons of fun. A 6 year old free ranging with a good AEG would be questionable. The AEG stuff really needs more organization since any of the good ones shoot pretty darn fast.
IMO, get them both single shot carbines and pistols so they can battle each other fairly. And maybe you and the 11 year old need AEG's to battle each other.

I use a green gas SIG M17 (full metal directly from SIG) in my basement all the time. It takes a couple magazines before you can even smell the propane. Don't worry about green gas, it's good to go. Just open a window of you're inside.
