My only concern is that "jerky" like that has a harder outer coating which although useable is a little more difficult to cook with that say a summer sausage where you remove the casing and dont have a hardened, dried outer shell anymore. Know what I mean? Of course you can get 2-6 oz sausages in those trial kits or samplers but what sucks is a 16oz regular one is $4.50 and those kits average about $5 for a 6oz one. Lame!
