Of course you can take her to RMNP and take a little picnic lunch with you, find a great spot overlooking the mountains and have lunch. Very romantic!

I have a family cabin up near Tabernash. We actually just got engaged this weekend and spent the weekend up there as well. The weather was really nice until it rained all afternoon and night while we were in Grand Lake.
I'll start my own thread about it. On a side note, do I really have to pay just to drive down to Monarch and Strawberry lakes?

Write her a letter. Handwritten is best. Tell her what you like about her, why you're happy to be married, all that stuff. I've done it a couple of times (out of 20 anniversaries) and in every case she thought I was pretty much the best husband ever. Covers up a lot of sins...
Whatever you do, do NOT buy her a household appliance. Don't ask how I know.

If you've been married a year you should have an idea what she likes. Unless she is a super practical woman (they are rare) a vacuum cleaner or such will leave you sleeping on the couch. More than than $'s I've found that if what I do shows effort & insight on my part all is peaceful.

Hand written love letter is the best thing I've heard so far. I'll have to use that one next year!

You could always go the Entourage route and bring her present in the back door.
