Kimber (not Kimberly) makes a pretty nice gun. The Series II models have a Swartz safety which I don't much like (read: if you can find a Series I go for that one), but that's not a deal breaker if you find a good deal on one. My stepdad has a Kimber Custom II that he gave a 2.5lb trigger job to, the fit and finish is extremely good and it shoots like butter (that saying made more sense in my head, but you get what I mean).
Before you ask... the Swartz safety is a firing pin safety like the Colt Series 80s have but is actuated by the grip safety instead of the trigger, so no extra crap in your trigger pull. There are a handful of stories around the interwebz about poor quality control with the parts of the safety causing issues with the gun's operation, but a handful of mostly second-hand stories out of the hundreds of thousands of SIIs sold isn't much to worry about. My problem with them is they're unnecessary and add one more point of failure to the gun. Its a great solution to a problem that shouldn't exist in the first place... you've already got a grip safety, thumb safety, trigger disengage (think that's what its called... pin on the top of the frame that prevents the hammer from falling when the slide isn't over it), there's really no need for a 4th safety measure. No firing pin safety = no problem in the first place.
Anyway, personally I'd take anything made by Kimber over a Ruger 1911. In the $600-800 price range, you can get an STI Spartan, almost any Springfield, a decent Para Ordinance, etc. new or lightly used, all great guns. Hell IIRC there was a pretty nice Para for sale on her for around $700 not too long ago.
For a little more ($900-1k) you can pick up a used Dan Wesson or Wilson Combat, both of which put the other brands to shame. But that's getting into a whole nother class of 1911s.
Here, look around on this forum and do some reading. There's brand-specific subforums where you can go in and read what people who own a particular model are saying about it.
