    Default Hey, Grandpa! What's fer supper?

    The wife and I tried a new take on pizza tonight with pretty good results.

    Hand-made dough, roughly formed and cooked on the grill.

    A few tips. They're easier to handle if you do them rather small...kind of like a "personal" size. Obviously pre-heat the grill but keep it on LOW heat. Oil the grill with some olive oil so the dough doesn't stick. Be prepared to turn over the crust after about 3-5 minutes and quickly add ingredients. Keep heat low until dough is cooked nicely brown on the bottom, the cheese melts and all the ingredients are heated.

    Very tasty!

    Yeah, it was kind of a spontaneous thing...we just threw it together with what was on hand:
    • Pepperoni
    • sun-dried tomatoes
    • onions
    • green peppers
    • Jalapenos
    • couple of different cheeses
    I would've liked some olives and maybe some artichoke hearts, too. But, you can add whatever you like.

    I could deliver...I just don't think it would be cost effective for you!

    I'm a tard when it comes to baking, unless it comes in a package. Every thing else no problem!

    OK...

    Pizza Dough:
    • 1 Package Dry Yeast
    • 4 Cups Sifted Flour
    • Olive Oil
    • 2 Teaspoons Salt
    • Corn Meal (Optional: to roll the dough on)
    • Sugar or Honey (Optional: Add to dough to suit your taste if you prefer)
    • I like to add a little Cayenne Pepper to the dough
    Dissolve yeast in 1/3 cup warm water. Add the flour, 2 tablespoons Olive Oil, 1 cup warm water, and salt (and other optional ingredients you desire) and knead for 10 minutes. After kneading place the dough into a large, oiled bowl covered with plastic wrap for rising. After the dough has doubled in bulk, could be up to 2 hours, punch it down and divide in two (or more depending on the size of pizzas...we did four smaller ones). We have a gas oven so the pilot is always on and the oven is relatively warm inside. The wife puts the dough in the oven and it only takes 30 to 45 minutes for it to rise.

    Let rest for 5 minutes. Have your grill ready on low heat. Form the dough into pizza crusts (you can do this on the corn meal to keep it from sticking). After the crusts are formed, place the dough on wax paper sprayed with Pam or equivalent to keep the dough from sticking.

    When you're ready to start cooking, thoroughly oil the grill with olive oil. Place the dough on the grill and cook one side til nicely brown. It only took 3 or 4 minutes but we had the grill a little too hot this first time.

    Turn it over and quickly spread your favorite sauce and add ingredients. You have to be kinda quick here because the dough doesn't take long to cook.

    Cook until the dough is cooked through and the ingredients are melted and heated through.

    Eat.
