Take the scenic route maybe from Moab south to Page (if I am remembering correctly)
and visit Page, Moab, Durango, 4 Corners to name a few. Id also try to go to Monument Valley and even hit Zion or Bryce Canyon on the way back.
Dont go to either first because the Grand Canyon will be a dissapointment then.
