Figured its time for me to get an avatar. Couldn't think of anything else, so for the moment it's my telescope.
Ugh, I ate way too much.
Ribs were awesome.
Chopped up some of the brisket with some sauce and put it with some cole slaw on toasted bun sandwiches. That was awesome.
Had a little quarter of ham left, so I threw that on the smoker towards the end and that turned out awesome.
Plus we had corn. You can never go wrong with corn.
And I made homemade guac.
I'm not eating for several days now.
Should have taken some good pics. Grabbed this though - at least you can see a bit of it.

Man oh man, I am suddenly extremely starving after reading your update, Brian.
Maybe its time I look into getting a smoker again...
I'm going to probably spend at least an hour tomorrow slicing, vacuum packing and freezing all that stuff. The good news is it lasts for a while since I usually make at least 2 briskets at once and we never eat all that in one sitting of course, even with help. I freeze little packets of chopped up brisket in a "goo" full of semi-custom bbq with honey and spices, etc. My wife calls it crack meat.
Okay, including pictures is is just plain torture!!!!
Not a bad idea to smoke more than you need and freeze half. I really miss pork burnt ends from Jack Stack BBQ in KC, they have the best sauce I've ever tasted. And having grown up in KC, I've gone to the Great American BBQ Festival several times and tasted hundreds of bbq sauces, only to keep going back to Jack Stacks as my favorite.
