I'd like to find a good butcher shop also.

Boulder sausage has the best OTC sausage on the market. Their chorizo is top shelf. With that being said i deal with...........................Clydes in N denver. been there for decades and takes care of me. Anyone interested, touch bases with me so i could give them a heads up as they are not a walk in store, purely a processing gig.
Italian Sweet, Hot, bulk, link coil, meatballs,,,,,,,,,,,,, hey what can i say this is it.
He does a chorizo that's a little greasy and is slamming.
They also do a hot cured sausage stick that, well ask jreifsch, brycom, zteknik . They were chowing down on what i had left yesterday.

If you have time and looking for italian, i suggest taking a drive along 38th ave west of 25. there are a lot of old time stores where you can decide who makes the better this or that. That part of town is a deeply entrenched italian / hispanic community that's been there for ever.
Meatman has the inside info where to go for other vendors.
