Keep in mind im just cracking the wheat not making flour. The flour that could be made with these would be too course for baking. I need to get a motorized made in the USA unit and start baking

Two times through might do it. The plates are far from precision machined though. As you get them close enough to grind finely id worrry about them touching and a chinese alloy of unknown composition in your bread.
