I've become partial to the Havalon skinning knives. The blades are razors that you change out. I skinned 3 elk on one blade.

I really like the Buck Omni Hunters, but I don't think they make one with an orange grip anymore.

More than that, get a good sharpener and use it often. I broke down and bought a Chef's Choice sharpener and I keep it at the butchering station. Before I go hunting, I make sure all the knifes are sharp. I do all my own butchering and use three or four different knives for that task.
