In college, I worked in the kitchen in a sorority. Motives aside...

We had to cook bacon for 180-240 people, girls, guests and staff.

We would lay out pounds of bacon on 24"x48" trays and always do it in the oven. Works great, and I always had more than my share.

A buddy turned me onto this method a few months back and ill never go back to pan cooking. Going to try to dusting of flour tip next time.

Added bonus. This way doesn't stink up your house like bacon grease as much, which keeps mama happy.

I bake in situations requiring quantity.
I pan fry for myself, and to keep the cast iron seasoned.
When I don't have to prepare it, I'll eat however it is cooked.

I don't cook. Not even bacon. That's why I got married.

Oh, who the hell am I kidding? I do pretty much whatever she tells me to. I mean "asks" me...not "tells" me. Nobody tells me what to do.

Oh, who the hell am I kidding?

But I like bacon...nice and chewy. Microwave works well, it's fast and very little mess if you use enough paper towels.

Funny enough, I just started doing this over the weekend finally. I'm eventually going to try the brown sugar coating on the bacon to see how that works, just sprinkle a little on top of each rasher.

If you do the brown sugar have to add red pepper flakes, damn fine. I broil bacon when I add brown sugar and pepper, you have to keep a close eye on it though. Normally just use the griddle, I cook, she cleans

Microwave. 1:20 per slice and a few sheets of paper towels under to soak the grease.
