put a salt based dry rub on it start it in the oven then finnish on the grill with water soaked hickory chips on the hot coals..... that's how my friends dad (the meat science professor at CSU) did his bbq before getting a nice electric smoker.... i have their family recipe for their texas bbq sauce too (their from fredericksburg)
