I showed my wife this:

My wife is from another country (UK). I showed her and she asked: "Who is Chuck Norris?"
After I picked myself up off the floor, I was just lost for words.
How do you even begin to answer that?

In five words? The right hand of God.
He even went 1-on-1 (staged) with Bruce Lee.

He might not be as tough as Bruice Lee on Martial Arts alone, but he is overall tougher*.
* just an opinion based on his movie rolls stunts and etc.

I am at a loss. I know people from the UK and they all know who Chuck Norris is.
You and you wife must be quite young.

I'm nearly 50. She's just easing into her 40's. She despises action movies, so it doesn't surprise me that she's never watched one.

If she despises action movies then it doesn't matter. Only way to know Chuck Norris is to watch Chuck Norris.

Simple. She may not know who Chuck Norris is, but that's because Chuck Norris doesn't want her to know.

Gordon Ramsey but with feet, fists and guns instead of just a mouth.

Despises action movies? THAT is a big genre to not consider up for viewing, I'm not even going to include a Chuck film: Raiders of the Lost Ark, Saving Private Ryan, Fight Club, Crouching Tiger, Matrix, Dirty Harry, The Professional, Princess Bride, Road Warrior & Mad Max & Fury Road, The Avengers, Mission Impossible, Le Mans, Full Metal Jacket, Deadpool, No Country for old Men, Kill Bill, Vanishing Point, John Wick, Smokey & the Bandit, Guardians of the Galaxy, Edge of Tomorrow, 5th Element, <<gasp>> Way of the Dragon, Gladiator, Terminator, Die Hard, Lord of the Rings, Hero, Pale Rider, Kung Fu Hustle, Serenity, 13 hours, Snatch, Akira, Blackhawk Down, Red, Mr. & Mrs. Smith, Tropic Thunder & Star Wars just to name a few...
It must be true love ♡

I own every one of those movies. Yeah....I die a little each day. But it is true love. And I'm far from perfect, so I can't judge to harshly.
Even worse. She severly dislikes firearms (though she does own one for protection).
I just got moaned at about the amount of munitions I have when a box of projectiles came in from SellersM.
I own about 4 times as many firearms as she thinks I own.
Yet, she's still a keeper. (Though I'd probably say that about anyone dumb enough to marry me)

I recently visited a widow's house to help with the estate.
There were more than 100 firearms in the shop area, in the closets, under the beds, in the drawers.
The widow said her husband had told her that he had collected about 3 or 4.
All I could do is just nod and say, "that sounds about right"

While I agree with your overall premise, you're stretching things with that list. "The Princess Bride", "Smokey and the Bandit", and "Tropic Thunder" are generally classified as comedies; "Lord of the Rings" is a fantasy epic; "Fifth Element" and "Star Wars" are generally (wrongly) classified as science-fiction, etc. A movie isn't an "action" movie just because it has action in it -- most good movies will have some kind of action in them. IME, "action" movies are classified as such when that's the main (or only) draw. While Ahnald had some good one-liners in "Commando", let's face it, none of us went to it for the laughs, they were just a bonus. The first "Dirty Harry" movie was actually more of a social commentary on the then-sad state of societal values and how it impacted the police mission to "protect and serve" in San Francisco in the late 60s/early 70s -- there really wasn't a lot of action in it. OTOH, when I throw a movie with Jason Stethem, Chuck Norris, Ahnald, etc. in the player, you KNOW I'm looking for some explosions, weaponry, and fisticuffs with some laugh lines thrown in for good measure.
One movie I find harder to classify is "Running Scared". Was it a cop action movie with a LOT of typically great Billy Crystal lines thrown in or was it a comedy with a couple action sequences thrown in? Either way, I don't care but I sure wish they'd made more Billy Crystal/Gregory Hines duo films. Those two were gold together.

Another movie I can't believe they tried to 'remake'.
