I'm refreshing this thread in hopes of seeing some recipes. I'm in the midst of a project to design and build some collapsible solar ovens that I can make with my CNC router. Once we have a prototype around the end of April, I want to try grinding some wheat and making bread with it.
I don't make this in a solar oven, but this is the recipe I use for bread. I abuse my kitchenaid stand mixer, but this can be kneeded by hand.
Whole Wheat Bread

Ingredients:
- 4 1/2 tsp Active Dry Yeast
- 3/4 cup Warm Water
- 1 cup Whole Wheat Flour
- 4 1/2 cups Whole Wheat Flour
- 1 1/2 cup warm water
- 1/2 cup Vital Wheat Gluten
- 2 1/2 tbsp Vegetable Oil
- 1/3 cup Honey
- 1 tbsp Salt
- 1 Egg
- 1 tbsp Water
Directions:
SPONGE
In mixing bowl place 3/4 cup warm water. Add 4 1/2 tsp yeast and stir. Add 1 cup flour and stir. Cover bowl with plastic and let sit in warm spot for 45 min to 1 hour.
DOUGH
When sponge is ready, add 1 1/2 cup warm water and 2 cups whole wheat flour and use mixer with mixer blade to stir. Add 1/2 cup vital wheat gluten, 2 1/2 tbsp oil, 1/3 cup honey, and 1 tbsp salt. Mix well. Using mixer speed 2 add remaining 2 cups flour 1/2 cup at a time while mixing.
Switch to dough hook. Add tbsp of flour at a time until bread stops sticking. Knead the dough with dough hook for 10 minutes at #2 speed setting. When dough is ready you should be able to draw the dough into a ball without cracks forming on the surface.
Place dough in a greased plastic bowl and cover with plastic. let rise 1 to 1 1/2 hours until doubled. Poke bread, if hole just stays there it is ready.
Place dough on floured surface and press all air out. Cut the dough in half. Shape two loaves by flattening dough into a long shape and rolling it up like a towel making sure not to leave any air gaps. Pinch the sides over so they are smooth.
Place dough in bread pans and cover with plastic. Let rise and hour or less. Poke test should fill in slightly.
Preheat oven to 350. Mix egg and tbsp of water and brush over the tops of the loaves. Bake bread for 40 minutes. Cool for 1 hour before serving.
